Beef Enchiladas with Flour Tortillas

 

As my children get older, I find myself appreciating meals where each element can be made ahead of time and even better, a meal that provides leftovers that are just as delicious rewarmed.  Flour tortillas have always been a go-to for me.  I would say that at least once per week we have something that utilizes a simple tortilla.  From breakfast burritos to steak fajitas, being able to make a large batch enables me to quickly throw something together and wrap a tortilla around it. Today I am not only giving you a great tortilla recipe, but also featuring the Meat Mincer Complete Package to create a rich and smooth enchilada sauce.  Not a traditional enchilada sauce, this recipe has elements of a mole giving it an earthy and smooth flavor.  I was tempted to call it a Molchilada!  It keeps beautifully in the refrigerator and can also be canned using a water bath method.

As I share my recipe for flour tortillas I also want to introduce you to one of my favorite kitchen tools.  The 10″ Flat Bread Maker by CucinaPro is one of those tools that makes my life easier.  I have the opportunity to use a lot of different pieces of kitchen equipment and normally I shy away from purchasing something that can only perform one task.  I seek out items that are multi-functional so that I feel I’m getting my money’s worth.  However, this item is one of those things that even though it can only perform one function, it does it so well and allows me to make something that my family loves, that I find it is worth every penny.

Vanilla Cake Roll from Manuela Kjeilen

 

If you had a chance to check out our post a few weeks ago, S’mores Chocolate Cookies, then you know that we are pairing up with the lovely Manuela Kjeilen from Norway this month; and featuring recipes out of her first English cookbook: Love, Manuela.  Equal parts gorgeous and mouthwatering, this huge baking book may give you the urge to don a string of pearls while whipping up something delicious in the kitchen.  Manuela’s personality shines through with little antidotes sprinkled throughout and instructions that bring on a smile (rub sugar into the towel with your beautiful hands).

I decided to feature her Vanilla Cake Roll since people often view a cake roll as a daunting culinary feat.  Cake rolls are actually quite easy to bake and always make an impressive presentation.  This one is filled with fresh raspberries as well as a raspberry mascarpone frosting.  Perfect for the warm weather berry season right now!

Spaghetti and Meat Sauce

Welcome to the first official post of 2017.  Lots of new things going on for the blog this year.  Each month we will be featuring recipes pertaining to a different package or attachment for the Ankarsrum mixer, and each month that certain item will be on sale.  This month we are tackling the Deluxe Package.  In addition to the Basic Mixer Package, this package also includes the Blender, Citrus Press and the Meat Mincer Complete Package.

Apparently this past Wednesday, January 4th was National Spaghetti Day, and I thought what better way to feature the Deluxe Package than to make up sauce using the strainer and meat grinder and fresh spaghetti with the pasta discs (included in the meat mincer complete package.)  And my husband really loves spaghetti, so bonus for him!
