Trying to incorporate more vegetables into your meals this year? Two of our favorite attachments for vegetable prep are being featured this month. First up is the blender with this roasted eggplant and red pepper sauce. Sauce is a very familiar and easy food to use to introduce new or more vegetables into your life, especially if you are also cooking for kids. Use up a leftover the next day AND have bread for those turkey sandwiches.
Most everyone loves pizza. Meatloaf? Maybe not. But why meatballs and not meatloaf? Why stuffed and flavored hamburgers and not meatloaf? Perhaps it’s the name, or perhaps it’s the look of it. But take all the familiar flavors of pizza and incorporate it into the loaf, roll it up with pepperoni and cheese and top with sauce and more cheese, and hopefully this recipe will change your mind about the humble meatloaf.
