Today is Strawberry Shortcake Day. That’s right, an entire day to celebrate the scrumptious summertime dessert. My daughter and I share a fanatical love of strawberries and the juicy berries are abundant and delicious this time of year in the central coast of California. So, I thought it only proper to create a shortcake recipe using the Ankarsrum mixer.
I must admit that I was skeptical using the Ankarsrum. You can’t use cold butter with the whipping bowl and whisks. No cutting in the cold butter? How could I get the desired texture in my shortcake? A little testing and tasting proved it possible. A quick whirl with the dry ingredients and the butter didn’t get too mixed in.
