Thanksgiving Leftovers: Cranberry Sauce Muffins

Thanksgiving is one of the most food focused holidays, and the leftovers are just as important as the actual feast.  However, most of us start to grow a little weary of turkey sandwiches and reheated casseroles after several days.  Ashley shared earlier this month a creative way to use up leftover turkey, and now I want to tackle an often overlooked side/condiment: cranberry sauce.

I grew up loving my mom’s homemade cranberry sauce.  It is just 3 simple ingredients: cranberries, honey and orange juice and makes the most bright and fresh sauce to cut through all those rich dishes on Thanksgiving day.  I always make a batch (or 3!) for Thanksgiving now.  But after the big feast day it usually becomes neglected in the fridge, although I enjoy spooning it over plain yogurt for breakfast.  Many people have family staying with them for the holidays, so I came up with a breakfast item that everyone would enjoy, whether they are a fan of cranberry sauce or not.  In fact, my daughter hates cranberry sauce but has been eating these muffins for breakfast, lunch and snacks and loves them.

Back To School Breakfast: Sausage, Egg & Hashbrown Frittata Cups

 

Several months ago I came across a recipe while on a diet. I loved the idea of individual egg frittatas but wasn’t crazy about the ingredients called for in the recipe so of course I had to tweak it just a bit. Now with school starting for most kids around the country, I wanted to share a super easy make ahead breakfast I believe your family will enjoy as much as mine has.

All three of my kids absolutely love breakfast food and would and could eat it all day every day. Also, with all three of them being involved in sports, this particular recipe has been a hit during weekend tournaments when they need a quick fix of protein. I believe this recipe is the perfect base and you could add your favorite additional items like spinach, feta, tomatoes, herbs….etc.

I also love that I’m able to use two of my favorite Ankarsrum attachments for this recipe. Hash browns couldn’t be easier when you use the Vegetable Cutter Attachment and grinding my own meat for sausage allows me to completely control the foods that I feed my family. No more chemicals or crazy amounts of sodium for my crew.

Raise a Glass To…

 

May often brings a celebratory spirit with it.  Cinco de Mayo kicks off the month to a fun start and then Mother’s Day is soon to follow (which you should definitely be celebrating and thanking your mom!!)  Many people have wedding anniversaries and birthdays to celebrate.  There is of course Memorial Day, where we honor the men and women who have and are serving our country.  Depending on where you live and if you have kids, May can also mean the end of the school year and the official start of summer.  So we decided to do another fun collaboration and each provide you with a refreshing cocktail to help you celebrate!
