Roasted Eggplant and Red Pepper Sauce

Trying to incorporate more vegetables into your meals this year?  Two of our favorite attachments for vegetable prep are being featured this month.  First up is the blender with this roasted eggplant and red pepper sauce.  Sauce is a very familiar and easy food to use to introduce new or more vegetables into your life, especially if you are also cooking for kids.  This one goes well with pasta, as a dipping sauce for bread, or a sauce for meat.

Red Cabbage and Carrot Coleslaw

 

Today is the first of the month and normally that means a bonus recipe for blog subscribers only.  But this month, the first falls on a regularly scheduled blog Sunday so we have a special recipe for all of our Ankarsrum USA Blog guests.  This recipe will also give you a taste of what our bonus recipes are like.

Today is also special because July 4th is just a few days away and with it comes a celebration of our nation’s birth.  July 4th for our family is filled with great food and tons of board games and a wonderful day spent with great friends.  This coleslaw recipe will be one you will want to add to your holiday menu for sure.

Carrot Cake Whoopie Pies

I came across a carrot cake whoopie pie recipe on Pinterest years ago.  While the idea was brilliant and mouthwatering, the end result was a fail, as Pinterest recipes often go.  But unwilling to let go of a good idea, I reworked that recipe until I was happy with it and now am kinda known for them.  I make them at Easter every year and bring them to parties and potlucks.  People love and curse me at the same time because they are one of those things you want to eat until you are sick.  And using the Ankarsrum to make them means baking is a breeze, especially when I also use the shredder attachment for the carrots.
