We can’t let grilling season pass by without putting the meat mincer attachment to use! Perfect for freshly made burgers using whatever kind of meat you want. We’ve used chicken thighs to create a flavorful and juicy burger stuffed with feta cheese and fig jam. Then we broke out the blender attachment to quickly whip up an arugula walnut pesto to go along with them. And if you really want to go all out, well, the mixer does an excellent job making homemade hamburger buns.
Most everyone loves pizza. Meatloaf? Maybe not. But why meatballs and not meatloaf? Why stuffed and flavored hamburgers and not meatloaf? Perhaps it’s the name, or perhaps it’s the look of it. But take all the familiar flavors of pizza and incorporate it into the loaf, roll it up with pepperoni and cheese and top with sauce and more cheese, and hopefully this recipe will change your mind about the humble meatloaf.
These burgers were almost called burrito or taco burgers. But uh, that sounds a little funny, and slightly unappealing. However, all those familiar burrito/taco flavors like green chilis, black beans, taco seasoning, even a little sour cream, have come together to create a delicious chicken burger that will bring some new flavors to your grill this summer. I highly recommend topping the burgers with pickled red onions, avocado and a little salsa and sour cream. No ketchup or mustard.
