Vanilla Bourbon Pear Butter Truffles

Vanilla Bourbon Pear Butter was featured as the October bonus recipe this year.  When I am recipe testing, I often have multiple batches of whatever I’m working on crowding my fridge and counter space.  I started to think of other ways to use the pear butter besides the obvious toast, pancake, waffle, charcuterie platter, etc.  I scooped out the middle of cupcakes and filled it with a little pear butter (yum!), used it as a filling for hand pies, and then started to think of making truffles with it after Ashley and I decided to have December’s posts be about homemade gifts.  I have loved this pear butter every which way I have used it, and while this truffle recipe is time consuming, it is not difficult and makes a unique and lovely gift to share during the holidays.

Meringue Toffee Cookie Ice Cream Sandwiches

 

I get my love of cookies from my sweet mother but my love of ice cream sandwiches comes straight from my dad.  My dad is pretty basic when it comes to his love of ice cream.  Simple vanilla with a few salted peanuts or cashews and maybe a drizzle of caramel sauce.  No chocolate for him!  I remember when I was younger, a special outing for us was a trip to the local ice cream shop for a blended ice cream treat.  Overwhelmed by all of the flavor choices my first visit, I took my dad’s advice and went with the toffee candy bar.  I was hooked and it has been my ice cream flavor weakness ever since!

S’mores Chocolate Cookies from Manuela Kjeilen

This month I am so excited to introduce you to my sweet friend Manuela Kjeilen from Norway.  In 2010, she started her blog Passion For Baking and within a year she was known as Norway’s “Most Beloved Blogger”.

I was first introduced to Manuela almost two years ago when she was visiting the US, shooting images for her first baking magazine.  She had previously featured the Ankarsrum Assistant on her blog in Norway and while here, requested to use the mixer in preparing all of her delicious foods for her photo shoot.  As it turned out, her photo shoot was only about 15 minutes from my home.  My children got to meet her and instantly fell in love with her!  She ended up using my middle son JJ in her magazine and cookbook.
